Healthy Snack – Date, Coconut & Almond Bites

Getting on a healthy diet can prove particularly challenging for people with a sweet tooth, who often wonder how in the world will they resist those sugar cravings, without jumping on a chocolate bar or any other processed sugar-loaded snack sold on the market. Having a sweet tooth myself, I have found a couple quick and super easy healthy snack recipes that I will share with you over the next couple of posts.  I’d like to insist on the “quick and super easy” adjectives, because let’s be honest: who wants to spend two hours in the kitchen baking, unless cooking/baking is your passion? Certainly not me!



The healthy snack I want to share with you today is a delicious no bake, processed sugar free, dairy free, and gluten free recipe, ready in less than 10 minutes.

What you will need:

  • 2 cups pitted dates
  • 1/2 cup raw almonds
  • 3 tbs unsweetened shredded coconut
  • 2 tsp vanilla extract
  • 2 tbsp water

Instructions:

Put all ingredients in food processor and blend until everything comes together.

Add unsweetened shredded coconut onto a plate and roll the mixture with your hands to form bites.

Keep refrigerated.

Absolutely divine to have with coffee in the morning. If you’ve tried it, let me know what you think!

Side note: One of the key points of having a healthy diet is to avoid eating too much sugar. Of course, processed sugars are to be banned at all cost, but even products that contain natural sugars such as fruits are to be consumed with “moderation”. Although this healthy snack recipe is fantastic, I wouldn’t recommend eating too many of these balls all at once, as dates are a very, very sweet fruit. I usually have two or three, max. 🙂
