Healthy dinner ideas that are also quick and easy to make are my favorites and this is exactly what I am about to share with you. I don’t make soups very often, because they contain potatoes most of the time and I try to avoid starchy foods as much as possible, as they are high in carbs. Potatoes in particular, contain a specific type of carbohydrate called Raffinose, which is an extremely indigestible sugar that is only assimilated in the large intestine, by releasing lots of gas. That is why you may feel bloated after eating too much French fries or mashed potatoes.

But what I like about this recipe is that although it does contain potatoes, the quantity is small enough to still be super healthy and not cause any bloating. This soup is so delicious, I have been making it on repeat for the past couple weeks. To turn all the ingredients into this smooth and creamy velouté, I used Hamilton Beach Professional 14 Cup Dicing Food Processor, which I have been swearing by since I got it in December. To give you a bit more info on why I love this product so much, it can dice, slice (thick to thin), shred, knead, chop, mix and puree quickly and without needing you to precut the ingredients. You can basically make everything from grating cheese, to making dough, soup, nut butters, cutting veggies and so much more. It is very easy to use and comes with a compact storage box that makes it easy to keep accessories easily accessible and organized. I LOVE it.

Now let’s get to the yummy recipe!

Ingredients for 4 servings:
– 1 butternut squash peeled and cut in small chunks
– 2 medium size potatoes peeled and cut in small chunks
– 1 branch of celery, cut
– 1 medium carrot, cut
– Chicken broth (I used this brand)
– 1 small onion diced

Instructions:
In a large saucepan, sauté onion, potatoes, celery, butternut squash, and carrot in one tbsp of butter.

Add enough cubes of water to cover the veggies and add 1tbs of chicken broth per cup of water. Bring to a boil then reduce heat to low. Cover the saucepan then simmer 40 minutes.
Transfer the soup to the food processor and process until smooth.

Serve and enjoy!
