Healthy breakfast ideas to level up your mornings! Last Sunday, I made this healthy and delicious granola recipe that I have been eating everyday for breakfast this week. It is filled with the healthiest nutrients for your body such as fats, protein, dietary fiber, vitamins and minerals. It is naturally sweetened, with just the right quantity of succulent dates for the recipe to be tasty and a hundred percent healthy, without spiking your blood sugar and insulin levels. Given that the recipe is high in dietary fiber and protein, it is also very filling, which ticks all the boxes of the perfect healthy meal or snack for me! This granola recipe can also be great as an on-the-go snack (or breakfast), simply place it in a Mason jar, grab a spoon and you’re good to go.

Advice: Given that the recipe is high in dietary fiber, you must drink plenty of water to ease the process of fiber passing through your digestive tract. What is the link between fiber and water? There are two types of dietary fiber: soluble and insoluble. Soluble fiber absorbs water to become a gel-like substance that slows down digestion, which helps you feel full longer; prevents blood sugar spikes and lowers cholesterol. Insoluble fiber retains fluids from your intestine, which prevents constipation and also increases the feeling of satiety. If you drink water frequently throughout the day, ignore this info. If you’re not much of a water drinker, make an extra effort to drink more when you consume fiber-rich foods.

Healthy breakfast – Granola recipe ingredients:

– 1 cup raw almonds
– 1 cup sunflower seeds
– 1 cup pumpkin seeds
– 2 cups pecans
– 2 cups old fashioned rolled oats
– 1 cup unsweetened shredded coconut
– 2 tsp vanilla extract
– 2 tsp ground cinnamon
– 3/4 cup coconut oil
– 20 dates
– 1 pinch salt

Instructions:

Preheat oven to 400°F.
Chop dates.
Chop almonds and pecans.
Mix all dry ingredients in a large bowl.
Add all wet ingredients in a small bowl and mix well.
Incorporate wet ingredients to dry ones and mix well until all ingredients come together.
Line a baking sheet with parchment paper and evenly spread the mixture in it.
Place in the oven for 20-25 minutes and enjoy! It’s particularly good when warm. 😉
