Healthy breakfast idea: Protein-packed pancakes for a nutritious breakfast or snack? It’s the topic of today’s blog post! As usual, it’s an easy, quick and delicious recipe with four ingredients only.

We all know it, the nutrient that is responsible for the feeling of satiety are proteins. Every time you snack on raw veggies or fruits, expect to be hungry again within a couple minutes. With that being said, for a lot of us, consuming the right amount of protein our body needs on a daily basis is problematic. And I say”we”, because I include myself in the mix.

I had been thinking about incorporating protein powder in my diet for a while before I actually gave it a try. After purchasing a cheap brand (that was frankly disgustingly sweet) as I was quickly passing by the pharmacy, and long hours of research, I finally found the brand that I liked.

I consume protein powder in shakes, but I also like to use it in certain recipes, to increase their protein content, like in the pancake recipe I am about to share with you, for instance.

Ingredients:

  •  1 scoop vanilla or chocolate-flavored protein shake
  • 1 tsp baking powder
  • 2 eggs
  • 1/4 cup dark chocolate chips
  • Optional: a tbsp maple syrup to further sweeten the pancakes.

Instructions:

Combine all ingredients in a small bowl et cook pancakes in a pan on medium heat, about 1min30 per side. Serve hot and pour maple syrup on top. This batch makes 5-6 small pancakes.

Tip: if you are vegan; replace eggs by flaxseed meal as follows: 2 tbsp flaxseed meal, 6 tbsp water. Mix well and refrigerate 15 minutes then start making your pancakes.
