Healthy banana muffins (with peanut butter and no flour!)

Healthy banana muffins are the easiest thing to make and are so convenient for busy mornings. The recipe I am about to share with you can be added to your list of healthy breakfast ideas, and can be used for meal prep. If you want to make the recipe strictly healthy, don’t add the chocolate chips, but I personally think they add flavour and are so comforting! There is absolutely no flour added and no dairy, which technically makes these the best healthy banana muffins ever.

Let’s get right to the recipe:

Ingredients:

  • 1 cup all natural peanut butter
  • 1 cup mashed banana (the riper the bananas, the sweeter the muffins)
  • 1 tsp vanilla extract
  • 3/4 tsp baking soda
  • 3 eggs
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/4 cup oat milk
  • Optional: dark chocolate chips

Healthy banana muffins – Instructions:

Preheat oven to 350F and place muffin liners in your muffin tins.

In a blender, combine all ingredients except chocolate chips. Once all the ingredients are well blended, add the chocolate chips and divide the batter into all the muffin tins. (If you don’t have a blender, mash your bananas in a medium bowl, then all ingredients and whisk until the batter becomes smooth.)

Bake for 25 minutes at 350F and allow to cool for about 30 minutes at room temperature before removing them from tins.

And voilà! You’ve got yourself a healthy breakfast, healthy snack and healthy dessert all with one recipe!

Ingredients

2 ripe bananas, mashed

1/2 cup peanut butter without oil or added sugar

2 eggs

1/4 cup honey or maple syrup

1 teaspoon pure vanilla extract

1/2 cup almond flour

1/2 cup gluten-free oat flour

1 teaspoon baking soda

A pinch of salt

Optional mix-ins: dark chocolate chips, chopped nuts, or dried fruit

Baking Instructions

  1. Preheat oven to 350°F. Lightly smear a muffin tin with oil or butter.
  2. Mash the ripe bananas to a smooth consistency.
  3. Add peanut butter, eggs, honey or maple syrup, and vanilla extract to the mashed bananas. Mix well to combine all ingredients.
  4. Combine almond and oat flour, salt, and baking soda in a separate bowl.
  5. Mix dry and wet ingredients well until you have a smooth batter.
  6. If desired, fold in your optional mix-ins, such as dark chocolate chips, chopped nuts, or dried fruit.
  7. Fill each muffin tin or cup to about 2/3rd capacity with the batter.
  8. Bake for 18-20 minutes or until the muffins are firm and a toothpick inserted into the center comes clean.
  9. Allow the muffins to cool briefly before transferring them to a wire rack.
